Omu Nomu Review at Beach Road Singapore: Craft Sake & Raw Bar



What an amazing day—enjoyed not just a feast of delicious food, but also fascinating insights from a truly experienced chef who clearly knows his craft and is passionate about it. (He had his fellow chef working on the good food, and he was here chatting with us as we explored the beautifully designed interactive layout restaurant while having the good food). Alex is also the owner of Omu Nomu, and yes, I’ve tried the food—it’s genuinely impressive.




I’m not usually a sake person, but their Doburoku was surprisingly enjoyable. I’ve had makgeolli before, and this felt like a mix of that and something new—smooth, flavorful, and paired nicely with the food.


A little about Omu Nomu: they focus on craft sake, from small-batch, experimental breweries to modern nano-breweries in Japan. They bring in fresh ingredients several times a week, and yakitori is grilled to order over Binchotan charcoal.


Doburoku itself is an unfiltered sake with a thicker texture and more robust flavors. The one I tried was the Fresh Herb Tea Doburoku from Happytaro Brewery, brewed with herbs like peppermint, spearmint, lemon balm, and chamomile from Kajiya Farm from Hiroshima, Japan. It’s a unique take on a traditional drink—and I actually quite enjoyed it.



When I sat down, the first thing I noticed was the environment. Unlike a typical restaurant, the seating here is mostly bar-style—perfect for those who enjoy good conversation over good food. They’ve clearly got an eye for detail too: what might have been an awkward pillar is now transformed into a striking sake poster feature wall, and even the utensils are arranged neatly, almost like little pieces of art. The interior exudes a sense of meticulous composition.



We were first served the Kinds Sashimi Moriawase, featuring:
Salmon, Ootoro, Chutoro, Tai, Shima Aji, Kanpachi, Mekajiki, and Ama-Ebi (served a little later, not in the same platter).



The sashimi platter was beautifully presented, each piece impressively fresh, flavorful, and generously thick.



Next up was the Tamagawa Steak: F1 Holstein-Wagyu Ribeye. Alex shared that Holstein beef is known for its rich, beefy flavor, and when crossbred with Wagyu, it offers a balanced mix of sweet marbled fat and beefy taste—rich but not heavy. A 200g portion lets you enjoy the flavors of Wagyu without it feeling too much. The steak is basted with aged sake and finished with their in-house steak sauce. The texture is tender and easy to enjoy.



We rounded off our meal with the Yakitori Selection. I learned something new here—how the type of charcoal used can affect the taste and texture of yakitori—and we got to try it ourselves. Really tasty! Here’s a pic of the Binchotan charcoal they used.

  • Bonjiri (Chicken Tail, salt grilled) – really unique

  • Spicy Kashiwa (Chicken Thigh, house-made spicy tare)

  • Tebasaki (Chicken Wing, salt grilled)

  • Buta Kashira (Pork Jowl, in-house yakitori tare)

  • Buta Negi (Pork Belly & Leek, yakitori tare & black pepper) – so flavorful

  • Butter Shoyu Kaki (Butter & Soy Grilled Oyster, Miyagi Prefecture) – delicious, so so good!

  • Fancy Saus Kaki (Cream, miso, dashi, chicken stock & roasted bell peppers)

  • Chizuyaki (Provolone cheese, grilled with honey)


  • Foie Gras (Charcoal grilled with house yakitori tare) – indulgent

  • F1 Rib-Karubi (Rib-Cap from Tamagawa Steak breed) – really tender


It’s a great mix of flavors, and I loved discovering a few new favorites.



And it doesn’t just end there—down to the smallest details, even the toilet carries its own eccentric touches and artistic flair.
