So what is 藝Yi by Jereme Leung about?

Hong Kong-born Singaporean Master Chef Jereme Leung, one of the most influential chefs in the modern Chinese culinary movement, makes his homecoming with 藝 yì by Jereme Leung at Raffles Singapore. 藝 (yì), which means art in the Chinese language, leverages the art form of fine dining to awaken the appetite and the senses of patrons. The restaurant delivers cuisine that takes guests on an exploration voyage to China’s vastly diverse cultural regions.


From adaptations of China’s ancient delicacies to Chinese classics, Jereme will be using single sourced and seasonal ingredients with a contemporary approach to deliver refinement and sincerity. Designed with modern sophisticated detailing, the restaurant features a soft white palette. Explore an immersive multi-sensory dining experience in the Experience Room with poetic dishes curated to evoke all five senses.



Let's start with the Appetiser: A classic Chinese dish for warm summer months, the Hundred-ring Cucumber & Poached Sea Whelk with Soy Sauce Vinaigrette. A beautifully plated thinly-sliced cucumber shaped into an intricate spiral topped off with poached sea whelk. This is dish is savoury with its sauce pairing with the skillfully cut hundred-ring cucumber. The chef will help in separating the pieces for each of us on the table. 


Next, we had a few Dimsum: 

-Purple Sweet Potatoes with Salted Egg Yolk Dumplings - It is photogenic and average in its taste.

-Tiger Prawn Rice Rolls - Looks like normal rice rolls, with fresh tiger prawns in them. 

-House Speciality Black Gold Egg Custard Buns
 - It is photogenic and average in its taste.

-Siew Mai Dumplings with Sakura Shrimps
 - The presentation is topped with Sakura Shrimps, tastes slightly unique to the common Siew Mai, and the ingredient used is super fresh. 

-Crystal Dumpling
 - It is photogenic and average in its taste.

-Sesame Shrimp Toast with Sweet & Sour Dip -
This is a MUST-TRY! Sweet and Fresh shrimp in the toast. Topped with Sesame, tastes really good with the Sweet & Sour Dip.
