Recipe: Pig Trotter Vinegar

Pig Trotter Vinegar


Number of Servings: 3-4pax

The traditional way to cook by Stove:

What to prepare?
1. 15g Sesame Oil
(if less oil is preferred, 10g is acceptable too)
2. 500-600g Front Pork Trotter
(Back leg may have tighter muscles, therefore may be hard when tasting it)
3. 1300g Water
4. 100g Bentong/Old Ginger (Lightly Smashed)
5. 400g Sweet Vinegar
6. 80g Brown Sugar
7. 50g Coriander
8. Salt to Rub on the surface of Pork before Blanch
9. Raddish (optional)
10. Peeled Hardboiled Eggs (optional)
11. Spring Onion (optional)
12. A Stainless Steel/Glass Cooking Pot (Do not use Wok to brew the Vinegar)
13. A Frying Pan

Directions:

1. Bring Pot of 800g water to boil. Place Pork Trotter in boiled water to Blanch Meat for at least 25mins. Discard water, Rinse the Meat.
2. Add Ginger and Sesame Oil and fry the Ginger on the Frying pan for at least 10mins.
3. Transfer 
the Fried Ginger & the Sesame oil to a Stainless Steel/Glass Cooking Pot and Add 500g Water, Pork Trotter, Sweet Vinegar, Brown Sugar, Coriander, Raddish, Spring Onion, and cook at the boiling temperature.
4. Boil, simmer and cover for at least 60mins.
5. Add Hardboiled Eggs at the last 15mins of Step 4.
4. Once it's ready, Serve Hot.


The future way to cook by Thermomix

What to prepare?
1. 15g Sesame Oil

12. Thermomix + Mixing Bowl + Spatula

Directions:

1. Place Pork Trotter and 800g water into Mixing Bowl to Blanch Meat 25mins, 120 degrees, reverse speed 0.5. Discard water, Rinse the Meat, Wash & Dry Mixing Bowl.
2. Add Ginger and Sesame Oil, set to 8 minutes, 120 degrees, Reverse Spoon to 0.5.
3. Add 500g Water, Pork Trotter, Sweet Vinegar, Brown Sugar, Coriander, Raddish, Spring Onion, Cover with Lid, and set to 60 minutes, 90 degrees, Reverse Spoon to 0.5
4. Add Hardboiled Eggs at the last 15mins of Step 3.

5. Once it's ready, you may Serve Hot.


A Great way to save is to cook at home!

Thermomix cooking style: 93mins
