Japan Onden Soup


Number of Servings: 4-6pax

The traditional way to cook by Stove:

What to prepare?
1. 1x Daikon (Raddish), Mid-size
2. 5 Tbsp of Dashi Powder / Bonito Soup Stock
3. 1 Tsp of Mirin
4. 5-10 thin slice of Naruto Maki (Japan Fishcake)
5. 1 Tbsp of Dried Wakame Seaweed
6. 1200g Water
7. White Rice Water (washed from White Rice)
8. 1/2 Tbsp of White Miso Paste
9. 1/2 Tbsp of Light Soy Sauce
10. A Pinch of Salt
11. 150-200g of Konjac Konnyaku Jelly
11. A Bowl, Pot + Cooking Spoon

Optional
1x Carrot
2x Boiled Eggs
1x Assorted Fishballs
3x Mid-size Shiitake Mushrooms

Directions:
1. Soak mushroom in a bowl filled with water for at least 1hr before soaking 4hrs in 2 Dashi Powder / Tbsp of Bonito Soup Stock with water.
2. Add White Rice water in the Pot along with White Raddish, boil for 20mins or until a stick can poke through (whichever timing that is shorter).
3. While waiting for White Raddish to boil, soak Konjac Konnyaku jelly and carrot in water that is filled with 3 Tbspn of Dashi Powder / Tbsp of Bonito Soup Stock. After the pot is ready, remove White Raddish and put it aside. Add the Konjac & carrot mixture and Mirin, Naruto Maki, Wakame seaweed, Assorted Fishballs, White Miso paste, Light soy sauce, and a pinch of salt into the pot.
4. Boil, simmer and cover for at least 12mins.
5. Remove mushroom from the Bowl and add White Raddish to the Bowl.
6. Add Mushroom into Pot to boil for at least 8mins.
7. Add White Raddish and Boiled Eggs into Pot and Stir well.
8. Once it's ready, you may Serve Hot.

The future way to cook by Thermomix:

What to prepare?

1. Soak mushroom in a bowl filled with water for at least 1hr before soaking 4hrs in 2 Dashi Powder / Tbsp of Bonito Soup Stock with water.
2. Add White Rice water & White Raddish in mixing bowl, Cover with Lid and set to 20 minutes, 110 degrees, Reverse Spoon to 0.5, or until a stick can poke through (whichever timing that is shorter).
3. While waiting for White Raddish to boil, soak Konjac Konnyaku jelly and carrot in water that is filled with 3 Tbspn of Dashi Powder / Tbsp of Bonito Soup Stock. After the Mixing bowl is ready, remove White Raddish and put it aside.
4. Add the Konjac & carrot mixture and Mirin, Naruto Maki, Wakame seaweed, Assorted Fishballs, White Miso paste, Light soy sauce, and a pinch of salt into the Mixing Bowl. Cover with Lid and set to 10 minutes, 110 degrees, Reverse Spoon to 0.5.
5. Remove mushroom from the Bowl and add White Raddish to the Bowl.
6. Add Mushroom into Mixing Bowl to cook for at least 5mins.
7. Add White Raddish and Boiled Eggs into Pot and Stir well.
8. Once it's ready, you may Serve Hot.



Tips: To refrain Raddish bitterness, soak and boil the Daikon in White Rice water before cooking it in the main soup base. (optional)

A Great way to save is to cook at home!
