Lemongrass Barley

Lemongrass is often used in Thai food for its potent flavour as well as a form of herbs in India. Lemongrass has a cooling energy that helps to soothe your stomach and keeps your digestive functions in check. It contains a component called citral that helps to digest food. Therefore, it is mostly served after meals. Barley also comes with some impressive health benefits such as it may lower cholesterol and heart disease risk. Both of these flavours together makes a refreshing and delightfully healthy beverage.

The traditional way to cook by Stove:

What to prepare?
1. 10 Stalk of Pandan Leaves, tied in 2 knots set
2. 5 Stalk of Lemongrass (Cut into Quarters and smashed)
3. 100g Barley
4. 900g Water
5. 40g Rock Sugar (optional)
6. A Pot + Cooking Spoon

Directions:
1. Bring Pot of 900g water to boil.
2. Add Lemongrass, Pandan Leave knots, Barley and Rock Sugar into the pot of water at the boiling temperature and stir well for 5 mins.
3. Boil, simmer and cover for at least 15mins.
4. Sieve and separate the Drink.
5. Once it's ready, you may leave it in the Cup / Pot to cool till 40 degrees Celsius.
6. Serve Hot or you may refrigerate it for cooling the drink.

The future way to cook by Thermomix:

What to prepare?
1. 10 Stalk of Pandan Leaves, tied in 2 knots set
2. 5 Stalk of Lemongrass (Cut into Quarters)
3. 100g Barley
4. 900g Water
5. 40g Rock Sugar (optional)
6. Thermomix + Mixing Bowl + Simmering Basket + Spatula

Directions:
1. Place Lemongrass in mixing bowl, Cover with Lid and set to 3 sec, Speed to 3.5.
2. Transfer Lemongrass from Mixing bowl to Simmering Basket. Add Pandan Leave knots into Simmering Basket.
4. Wash Simmering Basket and add washed Barley, Rock Sugar and water into Mixing bowl, place simmering basket, cook 15min, Temperature at 120 degrees, and Speed to 0.5. Cover with Lid.
5. Once it's ready, you may Serve Hot or you may refrigerate it for cooling the drink.

Please note: You may replace Rock Sugar with Rock Honey Sugar or Honey. The taste may vary depending on your Honey concentrate.

A Great way to save is to cook at home!

Stove cooking style: min. 20mins, max 30mins
Thermomix cooking style: 15mins
