Recipe: Chinese-styled Soy Sauce Cockles

Chinese-Styled Soy Sauce Cockles

The traditional way to cook by Stove:

What to prepare?
1. 400g Cockles
2. 50-60g Light Soy Sauce or 1/4 volume of the Cockles
3. 700g Water or up till 3/4 volume of the Cockles
4. 400g Ice Water
5. 1 Clove of Garlic (optional)
6. 1 small red chilli (optional)
7. Plastic Container or Glass Jar
8. A Pot + Cooking Spoon

Directions:
1. Bring Pot of 500g water to boil.
2. At boiling temperature, add Cockles into Pot and boil for 20-30secs.
3. Remove Cockles from the Pot and soak into 400g of Ice Water.
4. Put Cockles into a Plastic container or Glass Jar.
5. Add Soy sauce, garlic, chilli and up till 3/4 volume of water (or 200g of water, whichever is the highest volume).
6. Refrigerate for at least 4hrs before serving cold.

The future way to cook by Thermomix:

What to prepare?
1. 400g Cockles
2. 50-60g Light Soy Sauce or 1/4 volume of the Cockles
3. 700g Water or up till 3/4 volume of the Cockles
4. 400g Ice Water
5. 1 Clove of Garlic (optional)
6. 1 small red chilli (optional)
7. Plastic Container or Glass Jar
8. Thermomix + Mixing Bowl + Spatula

Directions:
1. Add 500g water in mixing bowl, Cover with Lid and set to 10 minutes, 100 degrees, Reverse Spoon to 0.5.
2. Add Cockles in mixing bowl, Cover with Lid and set to 30 seconds, 100 degrees, Reverse Spoon to 0.5.
3. Remove Cockles from the Mixing bowl and soak into 400g of Ice Water.
4. Put Cockles into a Plastic container or Glass Jar.
5. Add Soy sauce, garlic, chilli and up till 3/4 volume of water (or 200g of water, whichever is the highest volume).
6. Refrigerate for at least 4hrs before serving cold.

A Great way to save is to cook at home!
